Bangladeshi Begun Bhaja/ Fried Eggplant/ Fried Brinjal Recipe 🍆

"Begun Bhaja" is a traditional and authentic recipe from my country Bangladesh.
"Begun" is the Bengali word for "brinjal" and "Bhaja" means "fried". "Begun Bhaja" is nothing but marinated and fried brinjal slices.
This is one of my favorite go-to comfort foods. Very easy to make and you can experiment with spices to your taste if you make a fusion on your own.
This side dish can be eaten with rice and fish curry, khichri or just as a snack. Speciality in the rainy day I would like to eat this Fried Eggplant with khichri, muttun curry and mango chutney.
The speciality of this Bangladeshi recipe is that, you have to use mustard oil for frying the eggplant slices.

Ingredients

  1. 2 medium size Eggplant
  2. Salt as required
  3. 1/4 teaspoon brown sugar
  4. 1 teaspoon turmeric powder
  5. 1 1/2 tsp red chilli powder
  6. 1/2 teaspoon ginger garlic paste
  7. Mustard Oil for frying

Steps

  1. Cut the Eggplant into round shapes and clean it with water. Drain it and keep the Eggplant slices in a bowl.

  2. Now put salt, termeric powder, red chilli powder, sugar, and ginger-garlic paste into it and give them a well mix. Now keep them aside for half an hour to marinate.

  3. After the Marination, Take a frypan and put some mustard oil into it. Now heat it on stove. Put the marinated Eggplant slices into the oil and shallow fry them until it's 100% done.

  4. Stop the flame immediately when all are fried.

  5. Bangladeshi fried Eggplant is ready. Serve it with steamed rice, khichri or roti and paratha. Enjoy 😊.
